Meet our dear friend Chef, Sommelier & certified Cheese Master Taster, Roberto, from Tuscany! This winter you don’t have to travel far to experience the Tuscan way of life, cuisine and wine.

Join us for a one-of-a-kind immersion into the wines and cheeses of the global cuisine and wine-mecca that is Italy, and understand the historical and cultural influences which have shaped the culture as we know it today.

Sit back and relax as a highly accredited Italian sommelier sets the stage for an unforgettable, educational wine and cheese experience. You will not only understand the differences between quality wine from boutique wineries and industrial high volume wines, but also, how raw milk cheese expresses the authentic values of farming healthy animals and transforming their high value milk into excellent dairy products as compared to the logic of dairy industry that handles milk like a commodity across the globe.

Our educational classes provide a unique context for the enjoyment of wine appropriate for every level of interest and expertise. Taste wine as it was meant to be enjoyed, paired to perfection with regional cheeses. 

Class will include:

- 6 wine & cheeses to sample together
- Background on the marriage of Wine & Cheese
- Taste & Learn the various milks used in cheese
- Taste & Learn which wines pair better with cheeses
- Instruction on choosing the best cheeses
- High quality, artisanal wines and cheeses will be chosen


About Roberto Crocenzi:

Roberto has been following a path of passion for food, wine and the people who produce them his entire life. As all excellent cooks, he learned the value of quality ingredients bought locally and in season, and that of simple recipes with an emphasis on freshness and taste.

These principles have greatly influenced the menu in his restaurant Da Roberto in the medieval village of Montisi. His relationship with the farmers and winemakers is an important ingredient, and from them he is always learning.

Roberto is dedicated to the Slow Food Italia movement, supporting their tenets of protecting small growers and artisanal producers, respecting the animals, safeguarding the environment, and promoting biodiversity. 

In 2001 Roberto entered the hospitality business, starting in Abruzzo with a restaurant in the village of Scanno. He later moved to Tuscany in 2004 to run a small charming bed and breakfast, and then a countryside trattoria.

Roberto began making wine with his father (who learned from his grandfather) in their garage when he was a teenager and his path eventually led to the study of viniculture, graduating in 2002 as a Sommelier by A.I.S., the Associazione Italiana Sommelier.

In 2012, he completed a 2 year program, Maestro Assaggiatore Formaggio (Cheese Master Taster) by O.N.A.F. (Organizzazione Nazionale Assaggiatori Formaggio). And in 2013 he passed the first level (out of three) of Meats Taster at O.N.A.S., Organizzazione Nazionale Assaggiatori Salumi.

This passion for food and wine has led to a desire to share a conversation with others about its influence on the culture and lifestyle of Italy and to increase the enjoyment and pleasure of authentically Italian food and wine.
